The Process
Before it ever reached the cup, Nº 9 went through weeks of testing, trials, and intuition.
We roasted, we tasted, we rejected — then began again.
Some versions were too sharp. Others, too reserved.
Some were balanced, but lacked soul. Others, intriguing but restless.
We were searching for stability — not only in taste, but in the coffee’s behavior.
How does it hold in espresso?
What does it say through a filter?
We measured extractions, time, density, aroma.
These tests weren’t for results — they were for truth.
Each profile told a different story.
But only one remained — the one that didn’t demand attention.
